An Interview for French Affaires

Last week, I had a very pleasant chat with Elizabeth New Seitz–a true Francophile and the founder of French Affaires, an organization celebrating all things French. I met Elizabeth in Dallas this May, when I taught at the wonderful grocery there, Central Market. Love of French culture really does extend the world over, and I’ve found that it is truly appreciated in the American South.We talked about La Varenne, the history of French cooking, the modern culinary scene, and what I’d consider the perfect French meal.
